Buttermilk Waffles (adapted from No Reason Needed, original recipe here)
Makes about 10 waffles
4 eggs
2 cups buttermilk
1 cup vegetable oil
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1. Whisk the eggs briskly for a few minutes until light. Whisk in the buttermilk and the oil. Sprinkle the flour, baking powder, baking soda, and salt, and whisk to combine.
2. Cook in a waffle maker - this batter rises quite a bit, so be careful not to overfill.
3. Serve hot with your favorite toppings.
I'm also sending these waffles off to the Kitchen Bootcamp Challenge: Eggs and Breakfast!
I'm so glad you enjoyed them. Our favorite has become the banana walnut waffles (minus the walnuts). Mmmmmmm.
ReplyDeleteI need a waffle iron, I'm craving some.

We love a family breakfast around here, and I need a new waffle recipe to shake things up! They look yummy! Good choice for me!
ReplyDeleteOh waffles, I have not had some in a while, I have the iron collecting dust somewhere. Time to dust it off I think. These look great.
ReplyDeleteSara, these sound delicious. My waffle iron broke years ago and I did not replace it. Looking at your recipe makes me realize, I should have gotten a new one.
ReplyDeleteWaffles are a big favourite at my house, though seeing this point reminds me that I'm long overdue for another leisurely weekend waffle brunch. Love how golden brown and fluffy they turned out... must try this recipe soon!
ReplyDeleteWish I had a waffle iron! They look great.

ReplyDeleteCan't go wrong with waffles, in my opinion! Might have to get the waffle iron ready to go for the weekend =)
