Easy Vodka Sauce

I love vodka sauce - it's one of those comfort foods that just makes me happy whenever I eat it.  This recipe was a particular win because I had all the ingredients in my cupboard and didn't have to go grocery shopping!  Trader Joe's now makes a shelf stable heavy cream, which is awesome for pulling together a quick dinner - from now on I will definitely be keeping one of these in my pantry at all times.  In comparison to the other vodka sauce I make (also delicious!), this one is heavier on the tomatoes and has less vodka and cream, so overall it feels like a lighter dish.  (Of course, it still isn't particularly healthy!)  Even so, it makes for an easy and totally delicious dinner that is guaranteed to perk you up.


Easy Vodka Sauce (adapted from Serious Eats, original recipe here)
Serves 4

2 T unsalted butter
1/2 large yellow onion, minced
2 large garlic cloves, minced
28-ounce can crushed tomatoes with basil
2 T tomato paste
1/2 tsp red chile flakes
6 T vodka
1 tsp sugar
3/4 cup heavy cream
1 pound dried pasta

1. Put on a large pot of salted water to boil.
2. In a large non-stick skillet, melt the butter over medium heat.  Add the onions and garlic, and cook until softened and starting to brown, 6-7 minutes.
3. Stir in the tomatoes, tomato paste, chile flakes, vodka, and sugar.  Season with 1-1/2 tsp salt.  Bring the sauce to a boil over medium heat.  Then, reduce to a simmer and let bubble for about 15 minutes, stirring occasionally.
4. With a few minutes to go, cook the pasta in boiling water according to package directions.
5. Off the heat, stir in the cream.  Taste, and adjust seasoning.  Drain the pasta, and toss with the sauce.

  4. I love the vodka tomato sauce they sell at Trader Joe's but have never thought to make it at home. Going to give this a try, looks delicious!

  5. Vodka sauce makes me pretty content but I don't make it often enough. I have some heavy cream in my fridge...this might be a great quick and easy dinner tonight!

  6. What? I didn't know you could have pantry heavy cream - love it! And I love any vodka sauce - sadly my husband (whose Italian!) doesn't like red sauces too much - yours looks delicious!
