Chocolate-Chocolate Chip Oatmeal Raisin Cookies

I was in the mood for oatmeal cookies a couple of weeks ago, but chocolate sounded appealing too...luckily I stumbled across this recipe, which gives you the best of both worlds!  The cookies have tons of chewy oats, plus chocolate chips and golden raisins for extra yumminess.  The chocolate batter is almost gooey when the cookies come out of the oven, and the little bit of Crisco helps the cookies stay soft for a few days.  (Of course, feel free to use butter in place of the Crisco if you're not a fan.)  Be careful - these are totally addictive!


Chocolate-Chocolate Chip Oatmeal Raisin Cookies (adapted from The Nesting Project, original recipe here)

6 ounces softened unsalted butter
2 ounces trans fat free Crisco (or use an additional 2 ounces butter)
3/4 cup sugar
3/4 cup brown sugar
1 large egg
1 tsp vanilla
3/4 cup flour
3/4 cup cocoa
1 tsp baking powder
3/4 tsp salt
3 cups rolled oats
1 cup chocolate chips
3/4 cup golden raisins

1. Beat the butter, Crisco, and sugars together until light and fluffy.  Add the egg and vanilla and mix to incorporate.
2. Whisk together the cocoa, flour, baking powder, and salt in a small bowl.  Add to the butter mixture and mix until incorporated. 
3. Mix in the oats, chocolate chips, and raisins.
4. Scoop the cookies onto a foil-lined baking sheet and then bake the cookies in a 350 degree oven for 14-16 minutes.
