Two Marinades/Dressings

 These come from a class I took at work on dressings and marinades.


Fajita Marinade - simmer w/ beans or marinate 1 lb. chicken for 20 minutes

3 tablespoons fresh lime juice

1 to 2 tablespoons adobo sauce (from 1 can chipotle peppers in adobo sauce) or mince 1 adobe chili

¼ cup olive oil

1 tablespoon cumin

1 teaspoon garlic powder

1 teaspoon kosher salt


Lemon Dressing

 ¼ cup olive oil

 2 tablespoons lemon juice (from 1 medium lemon), to taste

 2 teaspoons Dijon mustard

 1 teaspoon honey or maple syrup

 1 medium clove garlic, minced

 ¼ teaspoon fine sea salt, to taste

 Freshly ground black pepper, to taste
